What are strawberry lemon blondies?

Strawberry lemon blondies are a variation of the classic blondie. We use lemon juice and lemon zest to get that delicious lemony flavour shining through with the addition of fresh, chopped strawberries. They’re fluffy, decadent, and bright. Plus, you can make them completely in one bowl and they come together in under 30 minutes before bake time. What’s not to love here? Add them to your list of your favourite strawberry lemon desserts.

  • dark brown sugar
  • light brown sugar 
  • eggs 
  • vanilla 
  • lemon
  • all-purpose flour  
  • baking powder
  • salt 
  • fresh strawberries 

How to make strawberry lemon blondies

The best thing about blondies is how easy and simple they are to make! The first thing we have to do to make these incredible strawberry lemon blondies is to take out the eggs and allow them to come to room temperature. Using room temperature eggs helps all the ingredients to combine easily and well. The next step is to preheat your oven to 350℉. Then, grease and line your 8”x8” pan and set aside. Finally, melt your butter and let it cool for a few minutes. 

Now that all of the prep is out of the way we can get to baking! Star by adding your butter and both sugars to a large mixing bowl. Whisk these together until the mixture is smooth and combined. Next, zest your lemon and set that aside with the rest of your dry ingredients. You’ll want to zest the lemon first because otherwise it’ll be a total pain in the butt to try to do it after you juice it. I also recommend using a large lemon so you can get as much lemon flavour as possible. 

Next, juice the lemon and add to your mixing bowl along with the eggs and vanilla. Mix again until well combined. Then add in the flour, baking powder, salt, and lemon zest. Switch to a silicone spatula and gently mix everything until it is just combined. It’s okay for it to be under-mixed here since we have to mix again one more time. Add your chopped strawberries and mix for the last time just until they are evenly distributed. We want to make sure we don’t over mix the batter.

I also prepped my strawberries a little bit before adding them to the blondies. After I chopped them I patted them dry with a paper towel. Then I tossed them in a little bit of flour as well. These two things help reduce the moisture in the strawberries which reduces any excess moisture in the blondies themselves. These steps aren’t necessary but definitely do help. 

Pour the batter into your prepared pan and spread it out as evenly as possible. When the oven has reached temperature, you can put your strawberry lemon blondies right into the oven. They’ll need to bake for around 30 minutes. You want to make sure you don’t over bake them but you also want them to be cooked fully. It’s okay if the center is still a little soft but you don’t want it to feel loose or wet. You can also treat the blondies just like a cake and stick a toothpick inside to check the doneness. If it comes out mostly clean, it’s done. 

After about 30 minutes, take them out and allow them to cool. This is the hardest part because you just did all that work and now you have to wait even longer. I totally get it, but it’s a super important part of the baking process. This cooling time allows your beautiful blondies to finish cooking completely and makes them a heck of a lot easier to cut. So after about 10-15 minutes (at least) you can cut them and enjoy! 

How to store 

If you have any strawberry lemon blondies left over, you can leave them in an airtight bag or container at room temperature for about 1 day after baking. If you’re keeping them for up to a week, I recommend transferring them to the refrigerator. I personally believe that fruit desserts stay better in the fridge. 

If you want to keep them for even longer than that, you can absolutely freeze them! Wrap your little bars in some wax paper and and keep them in a freezer safe bag or container. After that you can pop them in the freezer and keep them there for up to 3 months. When you’re ready to have them just take them out and let them defrost back to room temperature. Still as delicious as the day you made them!

Ingredients

  • 1 cup butter melted

Instructions

  • Take eggs out and let come to room temperature.
  • Preheat oven to 350℉. Grease and line an 8”x8” pan.

  • Zest lemon and set aside with the dry ingredients.
  • Juice lemon and add to the bowl along with the eggs and vanilla. Mix until combined.
  • Add in the flour, baking powder, salt, and lemon zest. Mix gently with a silicone spatula until just combined.
  • Add the strawberries and mix again until just combined and evenly distributed.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for about 30 minutes, be sure to not overbake.
  • Let cool for at least 10-15 minutes before cutting. Enjoy!
