What are s’mores cookie bars?

S’mores cookie bars are a different variation of cookies with that classic s’mores flavour profile. They’re made the exact same way you would make regular cookies but instead of scooping them out and baking them individually, you put all the dough in one pan and bake them as one. Then, you cut them into squares after they’re done and you have a gooey and chewy bar! These bars come out super thick which makes them even more decadent. And of course they’re loaded with graham crackers, marshmallows, and chocolate. 

Ingredients

  • dark brown sugar
  • white sugar 
  • butter
  • eggs
  • vanilla extract
  • all-purpose flour
  • graham cracker crumbs 
  • baking soda
  • salt 
  • chocolate chips 
  • mini marshmallows
  • graham crackers

How to make s’mores cookie bars

You make these s’mores cookie bars like you would make another other cookie. Start by preheating your oven to 350℉. Next, melt your butter and set it aside to cool for a minute or two. Then, to a large bowl or the bowl of a stand mixer, add the butter and sugars. Mix with the paddle attachment or silicone spatula until everything is smooth and combined. Next, add in the eggs and vanilla and mix again. If you’re using an electric mixer, be sure to scrape down the edges periodically to ensure an even mix. 

In a separate bowl, add the flour, graham cracker crumbs, baking soda and salt. Mix until combined and then gradually add to the wet dough mixture. After that, add in the chocolate chips, mini marshmallows, and chopped graham crackers and gently mix until everything is combined and evenly distributed.  

Next, grease and line a 9”x13” pan. This will create thick bars so if you’d like some that are thinner you can use a larger pan, you may just have to adjust the bake time slightly. Add all the cookie dough to the pan and press down as evenly as possible. If you’d like, you can also add some extra mix-ins to the top here. When the oven has reached temperature, place your s’mores cookie bars inside and let bake for 15-20 minutes. Mine took closer to 20 but everyone’s oven is different so just be sure not to under or overbake. 

You’ll know they’re done when the edges are a nice golden brown and the centre has firmed up. You can check your bars by inserting a toothpick, if it comes out mostly clean then you know they’re done. When they’re out of the oven, let them cool for another 15-20 minutes to allow them to fully finish baking. Once they’ve cooled you can cut them into squares and enjoy! 

How to store 

You can store your s’mores cookie bars just like you’d store any other cookie. They can stay at room temperature in an airtight bag or container for up to 5-7 days. If you’d like to keep them longer you can store them frozen in a freezer safe bag or container. They will keep well for up to 3 months. When you’re ready to have them just take them out and allow them to thaw to room temperature. You could also warm them up in the microwave to give them that fresh out of the oven feel!

Ingredients

  • 1 cup dark brown sugar

  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham crackers roughly chopped

Instructions

  • Preheat the oven to 350℉.
  • Melt butter and add to the bowl of a stand mixer. Add brown and white sugars, mix with the paddle attachment until smooth and combined.
  • Add in eggs and vanilla, mix until combined.
  • In a large bowl add flour, graham cracker crumbs, baking soda, and salt. Mix until combined, then gradually add to the wet dough mixture.
  • Add chocolate chips, marshmallows, and graham crackers and mix by hand until just combined.
  • Add all of the cookie dough to a greased and lined 9”x13” pan. Press down and spread out evenly. Add extra chocolate, marshmallows, and graham crackers to the top if desired.
  • Bake for 15-20 minutes or until edges are golden brown and the centre has firmed up. Let cool before cutting and serving. Enjoy!
