These babies are made just as simply as usual just with the addition of pumpkin. They’re soft and chewy and taste like pumpkin-y goodness! It’s the perfect easy and quick dessert to get yourself into the fall spirit!

What are pumpkin Rice Krispie treats?

Pumpkin Rice Krispie treats are exactly what they sound like. A classic Rice Krispie treat that is full of pumpkin flavour. We’re taking the classic recipe and just adding a little bit of pumpkin puree and some fall spices. It’s just another way to jazz up your traditional cereal treats!

  • Rice Krispies cereal

How to make pumpkin Rice Krispie treats

Start with the prep

Pumpkin Rice Krispie treats are an easy peasy upgrade from the classic version. The best way to start making any cereal treats is to prep well. This is especially helpful since the marshmallows in the recipe tend to set pretty quickly so you want to work with that in mind. Start by generously greasing your 8”x8” pan with butter. Set this to the side where you can easily access it and pour the treats in once they’re mixed. You’ll want to grease the silicone spatula you’re using to mix with butter as well. This makes it extra easy to mix and ensures that nothing gets stuck during the mixing process. Lastly, measure out all your other ingredients, that’ll be the cereal, marshmallows, butter, and pumpkin. And now you’re ready to start!

Melting and mixing

First, start by grabbing a large saucepan that, if possible, is a little bigger than you think you’d need. This makes mixing a whole lot easier. Next, bring the pan to medium heat and add your butter to let it melt. When it’s just about melted, add the pumpkin and mix until the two are well combined. Then, add the marshmallows and stir continually until they have melted and are smooth. When this is done, turn off the heat and add in the cinnamon and nutmeg. Mix until well combined. 

Cereal time

After you’ve added the spices you can add your cereal. Gently fold to combine the marshmallows and cereal together. Do your best to ensure that the cereal is as evenly coated as possible with the marshmallow mixture. As soon as that’s done, you can transfer your pumpkin Rice Krispie treats mixture to your greased pan. Spread the mixture out as evenly as possible until it is flat. Let it set at room temperature for around 30 minutes. 

How to store 

You can store your pumpkin Rice Krispie treats in the refrigerator for up to 5-7 days. If you’d like to keep them for longer you can keep them in a freezer safe bag or container and freeze them. They will keep well for up to 3 months.

Ingredients

  • 2 tbsp butter
  • 10 oz marshmallows
  • 6 cups Rice Krispies cereal
  • ½ cup pumpkin puree
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Instructions

  • Generously grease an 8”x8” pan.
  • Bring a large saucepan to medium heat and add 2 tbsp butter to melt.
  • Add in the pumpkin puree. Mix together until combined.
  • Add marshmallows and stir until completely melted. Remove from heat.
  • Add cinnamon and nutmeg and mix until combined.
  • Add in Rice Krispies cereal and mix well until evenly coated.
  • Pour the cereal and marshmallow mixture into prepared pan and press down until the mixture is spread out and flat.
  • Let sit for 30 minutes and cut into squares. Enjoy!
