What are peanut butter oatmeal chocolate chip cookies?

Peanut butter oatmeal chocolate chip cookies are one part peanut butter cookie, one part oatmeal cookie, and one part chocolate chip cookie. They are most similar to oatmeal cookies because of the structure and texture. But they also have a peanut butter flavour and added chocolate chips. These cookies are such a great combination of all 3 popular classics. 

Ingredients

  • unsalted butter
  • peanut butter 
  • light brown sugar
  • white sugar
  • eggs
  • vanilla extract
  • maple syrup 
  • all-purpose flour
  • salt
  • baking soda 
  • cinnamon
  • nutmeg 
  • rolled oats 
  • chocolate chips 

How to make peanut butter oatmeal chocolate chip cookies

Start by preheating your oven to 375℉. Baking at this temperature creates a cookie that has a nice crispy outside and a softer inside. If you’d prefer a cookie that’s softer overall, you can bake at 350℉. Next, melt your butter and add it to the bowl of a stand mixer along with the peanut butter, brown sugar, and white sugar. Mix on medium speed for a few minutes until all the ingredients are creamed together well.  

After that, add the eggs, vanilla, and maple syrup and mix again until well combined. Make sure to scrape the sides of the bowl as necessary. Next, add the flour, salt, baking soda, cinnamon, and nutmeg to a separate mixing bowl and mix until combined. Gradually add this mixture to the wet mixture on low speed. Then, add the rolled oats and chocolate chips and gently mix one last time until everything is just combined and distributed. 

Use a medium cookie scoop to scoop the dough onto a lined baking sheet about 2 inches apart. This dough does not need to chill so you can scoop the dough directly onto the pan. Or you can scoop it on a separate baking sheet and transfer to the pan going into the oven as you go. Gently flatten the cookie dough with a fork and put the peanut butter oatmeal cookies into the oven. 

Bake your cookies for 8-9 minutes until the edges are golden brown. It’s okay for the cookies to be less done in the middle as they will set up as they cool. Allow at least 5-10 minutes for your cookies to cool so that they can finish their baking process. And now you’re ready to eat!

How to store 

Your peanut butter oatmeal chocolate chip cookies can be stored at room temperature in an airtight container or bag for up to 5-7 days. If you’d like to keep them longer than that you can store the baked cookies in a freezer safe bag or container and keep them frozen. They can stay well in the freezer for around 3 months. 

Another option for storing is to freeze the dough before it’s been baked. All you have to do is scoop all the dough into balls and put them into a freezer safe bag or container. Then, you can keep the dough in the freezer for 3-6 months. When you’re ready to bake, just take out as many cookies as you’d like to make and thaw them to room temperature. And then you’re ready to bake them exactly as you would if they were fresh. This gives the freshly baked cookie experience every time which is incredible!

Ingredients

  • ½ cup unsalted butter melted
  • ½ cup peanut butter
  • ¾ cup light brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • ¼ cup maple syrup
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 3 cups rolled oats
  • 2 cups chocolate chips

Instructions

  • Preheat the oven to 375℉.
  • Melt butter and add to the bowl of a stand mixer. Add peanut butter, brown and white sugars and cream together.
  • Add the eggs, vanilla, and maple syrup, mix to combine.
  • Add the flour, salt, baking soda, cinnamon, and nutmeg and mix until just combined.
  • Finally, add the rolled oats and chocolate chips and gently mix until evenly distributed.
  • Scoop dough out onto a lined baking sheet and flatten the cookie with the back of a fork.
  • Bake for 8-9 minutes or until edges are golden brown and the middle is the slightest bit underdone.
  • Let cool for 5-10 minutes and enjoy!
