What are mini egg brownies

Mini egg brownies are an insanely easy, festive brownie that can be made in no time during the Easter season. This recipe is made using boxed brownies as the base and totally loaded with 3 different kinds of mini eggs. It’s such a fun way to incorporate those cute little seasonal treats while they’re available. 

How to make mini egg brownies 

This brownie recipe is so quick and easy, it’s perfect for any Easter gathering. Especially when you don’t have all day to make a dessert. Start by greasing and lining an 8”x8” pan and set it aside. Prepare your favourite brownie mix according to the instructions on the package. If you’d like, you can absolutely use your favourite recipe from scratch here. This is also a good time to preheat the oven. When the batter is made you can move onto chopping the mini eggs. 

I’ve chosen 3 different types of mini eggs for my version of the recipe. I saw so many different kinds at the store and could not resist trying more than one! If you’re a traditional fan, you can use only the classic Cadbury Mini Eggs (or whichever mini egg is your favourite). If you’re going this way, you can use around 2 cups of mini eggs in your brownies. I used one part Cadbury Mini Eggs, one part Kinder Mini Eggs and one part Hershey’s Cookies ‘n’ Creme Mini eggs. Choose the mini eggs of your heart’s desire here! 

Roughly chop all your mini eggs and add them to the batter. Mix gently until they have been evenly distributed and just combined. Pour the batter into your prepared pan and spread it evenly. At this point you could also add extra chopped mini eggs to the top if you’d like. Then, bake the brownies according to the directions on the package. 

When the brownies are done, let them cool for at least 15-20 minutes before cutting. This allows them to set up properly, finish their baking process, and makes them easier to cut. When cooled, cut the brownies into squares and enjoy! 

What kinds of mini eggs can you use 

It kinda seems like every chocolate company out there is making mini eggs these days. Which is great because you can pick exactly which ones you like to put in your mini egg brownies! Feel free to add any kind of mini eggs to your recipe. Mix and match a few different kinds or stick to just one. You could always just add your favourite Easter chocolate to the brownie batter and add a handful of chopped mini eggs on top too. The choice is totally yours, as always!

How to store 

You can store your mini egg brownies the same way that you would any regular brownie. You can keep them at room temperature for 3-5 days in an airtight bag or container. If you’d like to keep them longer you could freeze them. Let them cool completely and wrap them in wax paper. After that, you can keep them in a freezer safe bag or container for up to 3 months. When you’re ready to eat, just let them thaw.

Ingredients

  • 1 boxed brownie mix including eggs, oil, and water
  • cup Cadbury Mini Eggs chopped
  • cup Hershey’s Cookies n Creme Eggs chopped
  • cup Kinder Mini Eggs chopped

Instructions

  • Grease and line an 8”x8” pan.
  • Prepare the brownies according to package instructions.
  • Roughly chop all mini eggs. Add to the batter, mix until well distributed.
  • Add the batter to the pan and level. Add more chopped mini eggs to the top if desired.
  • Bake following package instructions.
  • Cool for 15 minutes. Cut into squares and enjoy!
