Froot Loops have been one of my favourite cereals for as long as I can remember. I have very distinct memories of eating and enjoying them as a child. Ever since I started experimenting with adding cereals into desserts, I’ve been trying to see where I can put my beloved fruity fave to make a yummy treat. 

Now here’s where the debate begins, can pancakes be considered dessert? In my opinion, yes. Although they are most definitely enjoyed for breakfast, the extra sweet confection falls more into the category of dessert in my eyes. In the same way cereal does, wink wink. But I don’t make the rules, have dessert for breakfast if you want! Life is short! Enjoy all things delicious! 

The inspiration for these came from a local restaurant I went to with my friends. Their Instagram showcases these beautiful pancakes that they have. One of them had Froot Loops on top and I just thought “I NEED TO TRY THOSE!”. But when we went to the restaurant ourselves they were no longer on the menu. So I decided that I would try to recreate them myself. I can’t actually compare the two because I never ate theirs, but what I can say is that these Froot Loops pancakes are so friggin’ good! 

Ingredients

  • Froot Loops cereal
  • all-purpose flour
  • white sugar
  • baking powder
  • salt 
  • milk 
  • unsalted butter
  • vanilla extract  

How to make Froot Loops pancakes

For this recipe, the steps and doing them in the correct order are the most important part. First, melt your butter and set it aside to cool. Next using a food processor or blender grind up the cereal into a fine powder. 2 ½ cups of cereal should equal about 1 cup of cereal flour, if not grind up a little more cereal until you reach 1 cup.

You want to mix your dry and wet ingredients separately to begin with. Starting with dry, add the cereal flour, all-purpose flour, sugar, baking powder, and salt to a large mixing bowl. Separate your egg yolks and whites before mixing the wet ingredients. Adding the whites on their own and at the end adds to the fluffiness of the pancakes. In a medium sized mixing bowl add the wet ingredients: milk, butter, egg yolks and vanilla. Then add the wet to the dry, mix gently until just before fully combined. There can still be dry pockets at this stage because we still have to add the egg whites. Lastly, add the egg whites and fold gently until they are incorporated and well dispersed. Let the batter rest for 15 to 30 minutes. 

Bring a skillet to medium heat and add a little bit of butter or oil. Scoop about ¼ cup of your batter and pour out onto the skillet, add as many as you can fit. Cook for about 3-5 minutes on each side. I find that homemade pancakes don’t bubble up as much as the boxed pancakes so you’re looking for the edges to cook up and look less wet before you flip. Make sure that you give the pancakes enough time for the centres to be cooked through. 

Once all your pancakes are cooked you can add your favourite syrup, butter, more cereal, or any other toppings your heart desires! Enjoy your freshly made Froot Loops pancakes!

Ingredients

  • 2 ½ cups Froot Loops cereal 1 cup cereal flour
  • 1 ½ cups all-purpose flour
  • 2 tbsp white sugar
  • 3 tsp baking powder
  • ¼ tsp salt
  • 2 cups milk
  • 2 tbsp unsalted butter melted and cooled
  • 2 eggs whites and yolks separated
  • 1 tsp vanilla extract
  • butter or oil of choice for cooking
  • extra Froot Loops for topping optional

Instructions

  • Melt butter and set aside.
  • Grind Froot Loops cereal into a fine powder using a food processor or blender. Measure out 1 cup of cereal flour.
  • Mix dry ingredients together – cereal flour, all-purpose flour, sugar, baking powder, salt – in a medium sized mixing bowl.
  • In another bowl mix wet ingredients together – milk, butter, egg yolks, and vanilla extract.
  • Add the wet ingredients to the dry, mix gently with a silicone spatula until just before combined.
  • Add egg whites and fold gently until they are fully incorporated.
  • Let batter rest for 15-30 minutes.
  • Bring a skillet to medium heat and add a small amount of butter or oil to the pan, spreading a thin layer to cover the surface.
  • Scoop about ¼ cup of batter out for each pancake and pour onto the skillet. Cook for about 3-5 minutes on each side, ensuring that the edges are starting to cook and no longer wet before flipping.
