What are Dunkaroo cookie bars?

Dunkaroo cookie bars are fun dessert bars inspired by the old school snack Dunkaroos. The base is a cinnamon graham flavoured cookie bar reminiscent of the OG Dunkaroo flavour. They are also topped with icing and sprinkles because you can’t have a Dunkaroo dessert without the icing, of course! And the cool thing about cookie bars is that you get to bake them all at once in a pan instead of having to scoop them all out. So they come together pretty quickly! 

Ingredients 

  • dark brown sugar
  • white sugar 
  • butter
  • eggs
  • vanilla extract
  • all-purpose flour
  • graham cracker crumbs 
  • baking soda
  • salt 
  • cinnamon 
  • frosting

How to make Dunkaroo cookie bars 

Start making the cookie base

To make these delicious Dunkaroo cookie bars, start by greasing and lining a 9”x13” pan and preheating the oven to 350℉. Next, melt the butter and add it to the bowl of a stand mixer. You can also use a hand mixer or mix it completely by hand. After that, add the brown and white sugars and mix everything together until smooth and fully combined. If you’re using a stand mixer, use the paddle attachment on a medium speed. Then, add in the eggs and vanilla and mix again until fully combined. Scrape down the sides of the bowl as needed to ensure your dough is evenly mixed.

Mix and bake

In a separate bowl add all the dry ingredients. That will be the flour, graham cracker crumbs, baking soda, salt, and cinnamon. Mix these together until they are well combined and gradually add into the wet mixture. You can mix this part on low speed or by hand until everything is just combined. Next, add all of the cookie dough to your greased pan and press it down as evenly as possible. Then, when the oven is ready, put your Dunkaroo cookie bars in and bake for 15-20 minutes until the edges are golden brown and the centre has firmed up and is no longer wet.  

Icing time

After taking your baked bars out of the oven, let them cool completely. This allows them to completely finish baking and will make it possible to add the frosting on top without it melting off. You can add them to the fridge to speed up the cooling process but I recommend letting them cool down a little bit on their own first. About 10-20 minutes is great before refrigerating. After 30 minutes to an hour they should be cool enough to add the frosting. Lastly, grab your favourite icing of choice and add as much as you’d like to the top of your bars. Then go crazy and add all the sprinkles your heart desires. After that, you can cut your Dunkaroo cookie bars into squares and enjoy them! 

How to store 

You can store your Dunkaroo cookie bars in an airtight bag or container in the refrigerator. They will keep well there for 5-7 days. If you’d like to keep them longer, you can store them in a freezer safe bag or container and keep them in the freezer. They will keep well for up to 3 months. When you’re ready to have them again, just take them out of the freezer and allow them to thaw to room temperature.

Ingredients

  • 1 cup dark brown sugar
  • ½ cup white sugar
  • 1 cup unsalted butter melted
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup graham cracker crumbs
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ tbsp cinnamon
  • frosting for topping

Instructions

  • Preheat the oven to 350℉.
  • Melt butter and add to the bowl of a stand mixer. Add brown and white sugars, mix with the paddle attachment until smooth and combined.
  • Add in eggs and vanilla, mix until combined.
  • In a large bowl add flour, graham cracker crumbs, baking soda, salt, and cinnamon. Mix until combined, then gradually add to the wet dough mixture.
  • Mix on low or by hand until just combined.
  • Add all of the cookie dough to a greased and lined 9”x13” pan. Press down and spread out evenly.
  • Bake for 15-20 minutes or until edges are golden brown and the centre has firmed up. Let cool completely before adding a generous amount of icing on top.
  • Cut into squares, serve and enjoy!
