What are cranberry orange cookies?

Cranberry orange cookies are fruity and fresh cookies made with orange zest and chopped cranberries. The base is a simple soft and chewy sugar cookie that allows the flavours to shine. These babies are made drop cookie style so there’s no rolling or cutting involved. They will go perfectly in any cookie assortment you have this season! 

Ingredients

  • white sugar
  • eggs 
  • vanilla extract 
  • all-purpose flour 
  • baking powder
  • salt 
  • orange zest
  • fresh or frozen cranberries 

How to make cranberry orange cookies 

To make your cranberry orange cookies, start by preheating your oven to 350℉. For the dough, start by adding the softened butter and white sugar to the bowl of a stand mixer. Using the paddle attachment, cream the two together on medium speed until light and fluffy. This will take a few minutes. You can also use a hand mixer if that’s what you prefer or have available. Next, add the full egg, egg yolk, and vanilla. Mix again until well combined. You may need to scrape down the sides of the bowl at this point to get an even mix. 

Next, grab a separate mixing bowl and add your dry ingredients to mix. That’ll be the all-purpose flour, baking powder, salt, and orange zest. Mix that together well and gradually add to the wet mixture until just combined. I like to do this in halves or thirds but any gradual addition will be great. The last step in making the dough is to add your chopped cranberries and just quickly mix only until all the cranberries have been evenly distributed. Next, take a medium sized cookie scoop and begin to scoop out the dough. This dough does not need to be chilled so if you’d like you can scoop out all the down onto some wax paper or a reusable baking sheet liner and add the cookies to another lined baking sheet as they’re about to go into the oven. 

To bake, add the dough about 2 inches apart on a lined baking sheet. Place in the oven and bake the cookies for around 8-10 minutes, until the edges are golden brown. Let the cookies cool on the baking sheet after removing from the oven for 5-10 minutes so that they can cool and finish baking. After that you can fully enjoy your soft, fluffy, and delicious cranberry orange cookies! 

How to store cranberry orange cookies 

Your delicious cranberry orange cookies can be stored in multiple ways. If you’d like to bake all the cookies and still have extras left over, you can store them at room temperature in an airtight bag or container. They will stay well for up to 7 days. If you’d like to keep them for longer, you can store them in a freezer safe bag or container and keep them in the freezer. They will keep well for up to 3 months. 

Another way you can store these cookies is to freeze the dough unbaked. After you’ve scooped them into dough balls you can store them in a freezer safe bag or container. They can be stored frozen for 3-6 months. When you’re ready to have them again, just take the dough out and allow it to thaw to room temperature. After that, you can bake them exactly how you would if they were fresh. Now you have freshly baked cranberry orange cookies any time you want them!

Ingredients

  • 1 cup butter softened
  • ¾ cup white sugar
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • zest of 1 orange
  • 1 cup fresh cranberries chopped

Instructions

  • Preheat oven to 350℉
  • Add softened butter and white sugar to the bowl of a stand mixer. Cream together with the paddle attachment on medium speed until light and fluffy.
  • Add egg, egg yolk, and vanilla. Mix until well combined, scraping down the sides of the bowl as needed.
  • In a separate mixing bowl, add the all-purpose flour, baking powder, salt, and orange zest and mix well. Add this mixture gradually to the wet ingredients and mix until just combined.
  • Add in the chopped cranberries, quickly mix until it has been distributed throughout the dough.
  • Use a medium sized cookie scoop to scoop out the dough.
  • Place cookie dough about 2 inches apart on a prepared cookie sheet. Bake cookies for 8-10 minutes, until the edges are golden brown.
  • Let cookies cool for 5-10 minutes before eating. Enjoy!
