Crumb cake was an absolute staple in my life growing up. I had mixed feelings about cake when I was a kid and didn’t really like icing (the second part is still mostly true). The Entenmann’s version was a family favourite for as long as I can remember, my grandfather even ate it for breakfast. But it wasn’t until my friend’s mom made her own version for us that I truly realized how much I loved it. I remember my mom asking her for the recipe because of how much all of us loved it, and I was so shocked to learn that it was made with a boxed cake mix. We made it so many times after that, any opportunity to make a crumb cake we were there. I even had it as my birthday cake one year. 

During one of my baking brainstorm explosions I was thinking about what kind of things you could put with Cinnamon Toast Crunch, another one of my childhood favourites. And it hit me in a way that felt like it should have been there the whole time – Cinnamon Toast Crunch crumb cake. Why didn’t I think of this before?! Since the flavours are so similar it comes through in a subtle way but is nonetheless delicious and brings a little more pizazz to your traditional crumb cake.

Ingredients for Cinnamon Toast Crunch crumb cake

  • yellow box cake (including the eggs, oil, and water needed)
  • cinnamon toast crunch
  • all-purpose flour 
  • light brown sugar
  • butter 
  • vanilla extract
  • cinnamon 
  • icing sugar

Tips and Instructions

  • choose any brand of box cake and make it the way you like 
  • using room temperature butter will make the mixing process much easier
  • don’t be shy, use your hands to mix!

Cinnamon Toast Crunch crumb cake sounds fancy and complicated but it really isn’t, especially when you use a boxed mix. All it takes is dropping some ingredients into a bowl, mixing, and putting things on top of each other. Make your cake according to the box’s instructions. Add the batter to a greased and lined baking sheet and bake at 350℉ for about 15 minutes. 

Then make your topping, you can choose to make this before the cake goes in the oven if you think it’ll take you more than 15 minutes. Using a food processor or blender, grind the cereal into a fine powder and add to a mixing bowl. Add in the all-purpose flour, sugar, butter, vanilla, and cinnamon and mix using a pastry blender or your hands. This part takes a little elbow grease so it helps to really get in there with your hands. You’re looking for the ingredients to be fully combined and in crumb like pieces. Add in the whole cereal pieces, mixing gently allowing some to be crushed and some to stay whole. 

When the 15 minutes is up add the crumb topping to the cake, spreading evenly over the top. Cook for another 10 minutes, you want the cake to be cooked and the topping to be a little softer and a little more moist. After it’s cooled, add powdered sugar to the top and dig in!

Ingredients

  • 1 yellow box cake
  • 2 cups Cinnamon Toast Crunch cereal separated (1 cup ground into fine powder, 1 cup whole)
  • 1 ½ cups all-purpose flour
  • cup light brown sugar
  • 1 cup unsalted butter room temperature
  • 1 tsp vanilla extract
  • 2 tbsp cinnamon
  • icing sugar for topping

Instructions

  • Preheat the oven to 350℉. Prepare the box cake following its instructions. Add batter to a greased and lined sheet pan and bake for 15 minutes.
  • Take 1 cup of Cinnamon Toast Crunch cereal and grind into a fine powder by putting it into a food processor or blender. It should amount to about ½ cup powder.
  • Add cereal powder, all-purpose flour, sugar, butter, vanilla, and cinnamon to a bowl and mix using either a pastry blender or your hands ensuring that all ingredients are combined well and the butter has broken down into small crumb-like pieces.
  • Add whole cereal pieces and mix gently, allowing some to break and some to stay whole.
  • After 15 minutes, take the cake out of the oven to add crumb topping. Spread out evenly over the top of the cake and put back into the oven for 10 additional minutes.
  • Let cool and dust top with powdered sugar using a shaker, dispenser, or strainer. Serve and enjoy.
