What are cinnamon roll Rice Krispie treats

Cinnamon roll Rice Krispie treats are traditional soft and chewy Rice Krispie treats with the addition of cinnamon roll drizzle as well as a white creme chip drizzle. All the elements of this recipe are incredibly easy to make and come together so quickly. This is seriously the best last minute treat! They are perfect for cinnamon lovers, cereal lovers, and dessert lovers of all kinds! 

Ingredients

  • butter
  • marshmallows 
  • Rice Krispies cereal (you can totally use the cinnamon flavour too if that’s available to you!)
  • dark brown sugar
  • cinnamon 
  • cornstarch 
  • white creme chips 
  • refined coconut oil (optional) 

How to make cinnamon roll Rice Krispie treats 

This insanely delicious recipe comes together in 30 minutes or less, which is incredible! Before you do anything you’ll want to get everything ready so you can work quickly. The marshmallow starts to set pretty fast so it’s really helpful to do your prep. Start by greasing your 9”x13” pan generously with butter and set aside where you can easily access it. I also highly recommend greasing your silicone spatula with butter as well. This helps to avoid any excess sticking. 

To start making your cinnamon roll Rice Krispie treats, grab a large saucepan and melt your butter over low heat. You’ll want to use a pot that’s a bit larger than you would think you need. This really helps with mixing and makes everything so much easier! Next, add the marshmallows and stir until completely melted. If you use mini marshmallows it’ll take a little bit less time than if you’re using the big ones. When everything is completely melted, remove from the heat. 

Next, working quickly, add in your cereal and mix until the marshmallows have evenly coated the cereal. Then, pour the mixture into your greased pan. Press down with your spatula until everything has spread out as evenly as possible. If you’re having a hard time with this, you can take a piece of wax paper around the same size as the pan and press it on the top of the Rice Krispie treats. Here you can use your hands to flatten everything out and make it super even. You will likely have to wait until the mixture cools to remove the wax paper. 

At this point you can either wait for the treats to set and cool on their own or you can put them in the fridge to speed up the process. During this time you can start making your drizzle toppings. For the cinnamon roll drizzle, melt ¼ cup of butter and add your brown sugar, cinnamon, and cornstarch. Mix everything well until it thickens slightly. For the creme chips, if you choose to use coconut oil you can add that to your creme chips and warm them up in the microwave in 20-30 second increments until everything is fully melted. If not, you can just warm the chips up on their own. The oil just helps to loosen everything up and makes it easier to drizzle on top. 

When both of the topping mixtures are ready you can begin to drizzle them on top. There is no special method to this part, just drizzle as your heart desires. I do highly recommend trying to cover as much surface area as possible so that you can get that cinnamon roll goodness in every bite. If you really love that cinnamon flavour, you could even double the drizzle recipe and go crazy with it! 

If you have the time, let your cinnamon roll Rice Krispie treats sit so that the topping can set up a little bit. You could cut them right away but it might be a little bit messy. When you’re ready to, you can cut your final treats into squares and enjoy them! Be prepared to be obsessed with these, they are seriously that good!!! 

How to store 

Your cinnamon roll Rice Krispie treats can stay at room temperature in an airtight container for up to 5-7 days (if they last that long). If you’d like to keep them for longer, you can keep them in the freezer. Just wrap them up with wax paper and store them in a freezer safe bag or container. They will keep well in there for up to 3 months. When you’re ready to have them, all you have to do is take them out and let them thaw.

Ingredients

Rice Krispie Treats

  • 4 tbsp butter
  • 15 oz marshmallows
  • 6 cups Rice Krispies cereal

Cinnamon Roll Drizzle

  • ¼ cup butter melted
  • ¼ cup dark brown sugar
  • ½ tbsp cinnamon
  • 2 tsp cornstarch
  • cup white creme chips
  • 1-2 tsp refined coconut oil optional

Instructions

  • Generously grease a 9"x13" pan with butter and set aside.
  • In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  • Add Rice Krispies cereal and mix until evenly coated.
  • Pour mixture into greased pan and press in cereal until evenly distributed and flat.
  • Make cinnamon roll drizzle by melted ¼ cup of butter. Add brown sugar, cinnamon, and cornstarch. Mix until it thickens slightly.
  • Pour drizzle over bars as desired.
  • Melt creme chips with coconut oil or on their own until smooth and loose enough to pour.
  • Drizzle on top of bars as desired.
  • Let toppings set completely and cut into squares. Enjoy!
