Hello Cereal is Dessert readers! This is my first post ever and I am so excited to be starting my blogging journey, thank you for being here.

Summer time always makes me think about ice cream sandwiches, they go together like two peas in a pod. It really is one of the most classic and staple treats. Early on in the summer I had been thinking a lot about ice cream dips for some reason. Maybe it’s because Dairy Queen came out with one that’s supposed to taste like Froot Loops (which I still haven’t tried yet, so I need to get on that if it’s even still available). I started thinking about the different things you could do with dips and what kind of flavours you could make. I’m hoping to expand on this thought and come up with some in the future.

Then the idea train in my brain took off, as it usually does, and I ended up reeling it into something more simplified and so easy that anyone could do it. Ta-da! A chocolate dipped ice cream sandwich. While this concept isn’t groundbreaking, it’s still fun, easy, and even cuter because it’s on a stick. You can make this entirely your own in any way you want. Who doesn’t love spicing up an old favourite?   

I took the magic shell recipe from Serious Eats and quartered it because their original recipe makes SO MUCH and I wanted to make it more suitable for this little treat. What you’ll need

  • dark chocolate
  • corn syrup 
  • coconut oil
  • ice cream sandwiches
  • toppings of choice 
  • popsicle sticks

There are so many ways you can go with your toppings. Cereals, chocolates, sprinkles, candy, cookies, anything you can think of! If you have graham cracker crumbs and marshmallows you can make a s’mores version. You could add your favourite fruity cereals on top. You could add 4 different types of chocolates. The possibilities are endless and you should have no problem finding things to use that are already in your pantry.

How to make a chocolate dipped ice cream sandwich

These truly are so freakin’ easy! Melt your chocolate, corn syrup, and coconut oil in a bowl in the microwave in 15 second increments. When the chocolate is fully melted, mix it all together until completely combined. You want to make sure the mixture looks uniform. Ensuring that all the oil is mixed fully and everything comes together as one. While that’s cooling off a little bit, you can cut your ice cream sandwiches in half. I just used regular ice cream sandwiches, you can of course use any variety you want.

Then, you can take your popsicle stick and push it inside the sandwich. Try to centre it as much as possible and start from the bottom where you made the cut to divide the sandwich into two pieces. I pushed my sticks up to somewhere between ⅔ and ¾ so that it could hold the sandwich without it getting flimsy at all. You also want to hold the sandwich together the best you can while doing this so that it doesn’t fall apart, you should have no problems if it’s cold enough.

Then it’s dip time! I used a larger bowl to make my magic shell mixture so that I would have an easier time dipping. Something wider like a pasta bowl or shallow dish will work well. Dip each side of the sandwich pop into the magic shell mixture as evenly as possible. Make sure you also remember to get the sides and the top if you’d like. Then, over some wax paper or a plate, pour whatever toppings your heart desires onto your chocolate dipped ice cream sandwich pops!

The shell will harden within a few minutes so keep that in mind when creating your masterpieces. I also found that sometimes my toppings fell off when I tried to flip my sandwich to put double toppings on. So for some I chose to just put toppings on one side. For others I quickly flipped my sandwich onto wax paper and left it there while putting the extra toppings on the other side. It helps to put them back in the freezer to solidify everything before eating, even if only for a few minutes. 

Now go nuts! The toppings are the most fun part so get as creative as you’d like and follow your tasty intuition!

Ingredients

  • 62.5 g dark chocolate about 1/2 cup
  • 1.5 tbsp corn syrup
  • ¼ cup refined coconut oil
  • ice cream sandwiches
  • toppings of choice
  • popsicle sticks

Instructions

  • Add dark chocolate, corn syrup, and coconut oil to a microwave safe bowl. Melt in the microwave 15 seconds at a time until the chocolate is completely melted.
  • Mix until thoroughly combined and let cool for a few minutes.
  • Cut ice cream sandwiches in half and put a popsicle stick through the bottom of each, pushing until about ⅔ to ¾ of the way to the top.
  • Dip ice cream sandwich pop into the chocolate mixture, flipping to coat both sides evenly. Don’t forget the top and sides as well.
  • Add your toppings of choice while the chocolate is still wet, it will harden relatively quickly.
  • Put back in the freezer to solidify your toppings and refreeze your ice cream or eat right away. Enjoy!
