What are cherry hand pies? 

Cherry hand pies are the little sibling of cherry pie. They have all the classic feelings and taste of cherry pie but they’re packaged in a smaller, hand-held treat. Here we make them with pre-made ingredients, making them an incredibly easy alternative to a traditional cherry pie. Anyone can make these no matter what level of baker you are! 

Ingredients 

You literally only need 3 ingredients to make these adorable little cherry hand pies. You need:

  • uncooked pre-made pie crust
  • cherry pie filling
  • egg or egg white 

How to make cherry hand pies 

Prep

This process is unbelievably easy and you can experiment with all different kinds of fillings. To start, grab your pie crust and let it come to room temperature. I made my cherry hand pies with Pillsbury pie crust, it comes in a box and has two 9” crusts. You can use any type of pie crust you can find as long as it’s uncooked. You could also make your own here if you’d like. Then, preheat your oven to 375℉. 

Measure and cut

Gently unroll your crusts and get them as flat as possible. If you’re using ones that are 9 inches, measure and cut a rectangle that is 9” x 7”. Then, from there, measure and cut 4 rectangles at 4.5” x 3.5”, which will be at the halfway points of each side. Complete this process for both sheets. Next, gently cut slits into half of the small rectangles. You will end up with 8 pieces that make 4 hand pies total. If you’re using crust of another size you can measure them evenly or you can use cookie cutters to create fun shapes. You can discard any excess pieces or save them for another use. You can also make some smaller pies with imperfect shapes. 

Add filling

Next, start to add your cherry filling. If you’d like to make your own filling you most definitely can! Add a few spoonfuls of the filling to the center of the uncut pieces. You want to make sure you leave some space around the edges to seal the crust pieces together. About ½” – ¾” should be more than enough. 

Assemble pieces together

Then, make your egg wash. You can do this in a few different ways. You can use a whole egg with a little bit of water, an egg yolk with a little water, or egg whites with a little water. Just a splash of water is more than enough. Next, take the egg wash and add it to the edges of the pie pieces that have the cherry filling. Put a little bit around the entire perimeter using a pastry brush, your fingers, or gently with a spoon. 

Carefully add the slit pieces to the top of the filling pieces, aligning the edges. Next, take a fork and gently but firmly press down along all the edges of your little pies. This seals the pie and ensures that no filling leaks out, so you want to make sure the pieces are pressed together well. Lastly, add some more egg wash to the top of the final pies. This will give them a beautiful golden colour. 

Bake

When the oven has preheated, place your cherry hand pies on a lined baking sheet and place them in the oven. The cherry hand pies will only need about 10-12 minutes. They are done when they are uniformly golden brown. After that, just let them cool for 5-10 minutes and you can enjoy right away!

How to store 

These cherry hand pies can be stored in an airtight bag or container in the fridge for up to a week. I like to refrigerate them because of the fruit filling, when you’re ready to have one you can just pop it in the microwave for a warm, fresh feeling. If you’d like to keep them longer you can freeze them. Just add them to a freezer safe bag or container and you can store them in the freezer for up to 3 months.

Ingredients

  • 1 package of premade pie crust
  • cherry pie filling
  • egg or egg white

Instructions

  • Take out pie crust and allow it to come to room temperature.
  • Preheat the oven to 375℉.
  • Unroll pie crust to flat. Measure a 9”x7” rectangle, cut off excess.
  • Divide evenly into 4 smaller rectangles each 3.5”x4.5”. Repeat for second crust sheet.
  • Cut diagonal slits into half of the crust squares.
  • Add cherry pie filling to the unslit pieces leaving at least ½” of space around the edges.
  • Make egg wash by adding a splash of water to a whole egg or egg whites and whisking together. Add egg wash to the edges of the crust pieces with filling on it.
  • Add crust pieces with slits to the top of the pieces with the filling. Line up and seal around the edges by pressing down with a fork.
  • Add egg wash to the top of all assembled pies.
  • Place pies on a lined baking sheet and bake for 10-12 minutes until medium golden brown. Let cool and enjoy!
