What are cake mix peanut butter cookies?

Cake mix peanut butter cookies are your classic peanut butter cookies made with a few simple ingredients, one being premade cake mix. It makes the cookies extra pillowy and fluffy and still delivers on that comfy peanut butter flavour we all know and love. The texture is personally my favourite part. 

How do you make cookies with cake mix? 

Making cookies with cake mix is very simple. It’s kind of like combining the process of making regular cookies with the process of making a boxed cake. In this case, we’re using a portion of the cake mix as opposed to the whole box. There are tons of recipes where you would use the whole box, but I wanted to try treating it like you would regular flour in a traditional recipe. The peanut butter acts as the fat in this recipe so there is no butter or any other option. Everything can be done in one bowl and by hand so no special equipment is required here. 

Ingredients

For this recipe you’ll need:

  • white or yellow cake mix: makes the cookies extra fluffy and gives us the essentials of all-purpose flour, baking soda, and salt 
  • peanut butter: the fat component and main flavour component of the cookies
     
  • vanilla extract: adds a touch of extra flavour and adds to the classic taste
      
  • vegetable oil: loosens the dough a little bit and promotes a tiny bit of spreading in the cookies 

How to make cake mix peanut butter cookies

These cookies are pretty much one step short of dumping everything in a bowl and mixing. To a large mixing bowl, add the peanut butter, eggs, vanilla extract, and oil. Mix well until all is completely combined and the peanut butter has loosened a little. Next, add the cake mix and gently mix again until just combined. Look at that, you already have a cookie dough made! 

Preheat oven to 350℉. Scoop out the dough using a medium sized cookie scoop and place on a lined baking sheet at least an inch apart. These cookies don’t really spread much so you have a lot more wiggle room on the pan than you would with something like a chocolate chip cookie. Still be sure not to place your cookies too closely together. When the oven is ready, put the pan in and bake for 8-9 minutes until the edges are golden brown. Make sure to let the cookies cool on the pan for a few minutes before eating. This will give them time to set up even more. 

How to store  

You can store these cookies just like you would any other cookies. If you want to have them for the next few days you can store them in an airtight bag or container for up to a week. If you’d like to have them at a later time you can do the same and just pop them in the freezer instead. They will last for around 3-6 months there. Alternatively, if you’d like to save them and make them fresh-fresh, you can scoop the dough and put that in a freezer safe bag or container for up to 6 months. When you’re ready you can take the dough out, thaw it to room temperature and bake the same way you would have originally. Either way these cookies will keep in the freezer for a good while!

Ingredients

  • 1 cup peanut butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ¼ cups white or yellow boxed cake mix
  • 2 tbsp vegetable oil

Instructions

  • Add peanut butter to a bowl and mix with eggs, vanilla extract, and vegetable oil.
  • Add 2¼ cups of boxed cake mix. Gently mix until just combined.
  • Preheat oven to 350℉. Scoop cookie dough onto a baking sheet 2 inches apart.
  • Bake for around 8 minutes until the edges of the cookies are golden brown.
  • Let cool and enjoy!
