Bacon Chocolate Chip Cookies

Bacon chocolate chip cookies may be one of those desserts that you would never think to exist, but I’m here to prove that wrong! These out-there cookies are the perfect combination of salty and sweet and are definitely a statement dessert. Bacon goes in all kinds of desserts so why not chocolate chip cookies?!

What are bacon chocolate chip cookies?

Bacon chocolate chip cookies are an unconventional variation of your classic chocolate chip cookie. Everything is exactly as you would expect from a regular chocolate chip cookie just with some bacon sprinkled in. If you like salty and sweet, you’re gonna love this one! 

What you need 

  • dark brown sugar
  • white sugar 
  • butter 
  • eggs 
  • vanilla extract 
  • all-purpose flour 
  • baking soda
  • salt 
  • semi-sweet chocolate chips
  • bacon

How to make bacon chocolate chip cookies 

Cook that bacon

The first step in making bacon chocolate chip cookies is to make some bacon, of course. Cook your bacon until it’s nice and crispy. If you use softer bacon it ends up being kind of gummy and isn’t as enjoyable in my opinion. I like to cook my bacon in the oven at 400℉ for around 15 minutes. It may take a little bit longer to get to that crispy level we’re looking for so just keep an eye on it. Drain the bacon on a plate with paper towels and let it cool. When it’s cooled you can finely chop it and measure out 1 cup. 

Make the cookie dough

To make the cookies, melt your butter and add it to the bowl of a stand mixer. You could also use a hand mixer here or even just mix it totally by hand since the butter is melted. To whichever bowl you’re using, add both sugars as well and mix until everything is smooth and combined. If you’re using a stand mixer, use your paddle attachment here and mix at medium speed. Next, add in your eggs and vanilla and mix again until well combined. This is also a good time to scrape down the sides of the bowl to make sure everything is being mixed well. 

Mix, scoop, and chill

In a separate bowl, add your flour, baking soda, and salt. Give this a quick mix and gradually add it to the wet dough mixture. If you’re using an electric mixer, use a low speed. Finally, add your chocolate chips and chopped bacon. Gently mix until the mix-ins have been evenly distributed but just combined. When your dough is complete, take a medium cookie scoop and scoop your dough out onto a lined cookie sheet. Let the dough chill for at least 30 minutes. You can keep it chilling in the fridge for up to 24 hours. If you’d like to keep it any longer I would recommend freezing it. 

Time to bake

Preheat the oven to 350℉ and when it’s ready, bake your bacon chocolate chip cookies for 8-10 minutes. You’ll know they’re done when the edges are golden brown and the middles are just slightly underdone. Let them cool for 10-15 minutes before eating. This allows the cookies to complete their baking process and set up fully so they don’t fall apart in your hands. 

How to store 

I recommend storing your bacon chocolate chip cookies in an airtight bag or container in the refrigerator. Just to be safe, I keep these cookies in the fridge because of the bacon in them. They will keep well in there for up to 5 days. If you’d like to keep them longer, you can definitely freeze them. To freeze them after they’ve been baked, just let them cool completely and store them in a freezer safe bag or container. Then you can pop them right in the freezer and keep them there for up to 3 months. When you’d like to have them again, just take them out and let them thaw to room temperature. 

If you’d like to freeze the dough, just take your scooped dough balls and put those into your freezer safe bag or container. When you’re ready for your cookies, take out the dough and thaw it to room temperature. Then, bake your bacon chocolate chip cookies exactly how you would if they were fresh. The dough will store well for around 3-6 months. This way, you can have fresh cookies on demand whenever you’d like!

Ingredients

  • ¾ cup dark brown sugar
  • ¾ cup white sugar
  • 1 cup butter melted
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cups semi-sweet chocolate chips
  • 1 cup bacon chopped

Instructions

  • Cook bacon until crispy and let cool.
  • Melt butter and add to the bowl of a stand mixer. Add brown and white sugars, mix with the paddle attachment until smooth and combined.
  • Add in eggs and vanilla, mix until combined.
  • In a large bowl add flour, baking soda, and salt. Mix until combined, then gradually add to the wet dough mixture.
  • Add chocolate chips and bacon and mix by hand until just combined. Scoop onto a prepared cookie sheet with a medium cookie scoop and let chill for 30 minutes minimum or up to 24 hours.
  • Preheat the oven to 350℉. Bake for 8-10 minutes or until edges are golden brown. Let cool before serving.
